Above average corn meal! My go to when making corn bread. Here it is:

1.5 cups cornmeal
2 cups buttermilk
3 tablespoons flour
1 teaspoon salt
1 teaspoon baking soda
1 egg

Bacon grease for pan

Get a cast iron hot in your oven at 450F. Mix all the ingredients. Once the pan is hot take it out and add bacon grease. It should start to smoke fairly quickly. Pour cornbread mix into pan and bake for 22 minutes!
